Meet the Board: Kelsy Baker

Kelsy BakerI am a proud Seattle native and second year MSN/DPD student at Bastyr University. In the last 5 years, I have worked as a nurse assistant in a variety of hospital settings from the ICU to the emergency department. In all cases, the one constant has been the desire to make a positive impact in patient health through food and diet. I earned my BA in Communications from the University of San Diego and I am a certified Pilates instructor. During my free time, I enjoy new restaurants, riding horses, fishing with my dad, experimenting in the kitchen, and watching sports with my husband. Here’s more about me:

Favorite meal: Eggs Benedict! When dining out for breakfast this is my go too. It’s too complicated and time consuming to make at home. I love all variations, but lately my favorite is from Hi Life in Ballard with pancetta and roasted Anaheim peppers. Yum!

Favorite form of physical activity: I can’t pick a favorite. I am a certified Pilates instructor and appreciate the reformer for high intensity workouts to slow stretching movements. I also enjoy brisk walks through Discovery Park with my dog, Indy, horseback riding, and snowboarding.

Favorite travel destination: I love spending in time at my mom’s place in Eureka, Montana. In the winter there are three mountains within an hour to ski at, snowshoeing and peace and quiet. In the summer there is river rafting, horseback riding and hiking. My favorite international travel destination was the Philippines. The people were so friendly, amazing diving, the best sunsets and of course delicious food.

Favorite food city: New York City. There are so many choices of every cuisine imaginable. Try Bubbies. Their sourdough blueberry pancakes will knock your socks off.

Favorite hobby: Is dog momming a hobby? Because that would be it. Indy keeps me active and provides endless amount of entertainment. #adventuresofindyandus

Something that most people don’t know about me: This last summer I started salmon fishing with my dad. Before I would just go out on the boat and read a book. But now I rise way to early in the morning, bait my own pole, and reel in dinner with all my might!
